The holiday season means that the crawfish season is right around the corner. LSU AgCenter crawfish extension agent Todd Fontenot says the 2026 season looks like a normal season.

“Nothing drastically has happened. We didn’t experience those severe high temperatures like we did two years ago with the drought. So, those conditions all look pretty favorable,” Fontenot said.

Fontenot says hot boiled crawfish is available, especially along the coast.

“We didn’t have any real cold weather yet. So nothing to really set back the crawfish from growing. So there are a few producers who are harvesting crawfish as you go further south in our growing region,” Fontenot explained.

Fontenot says crawfish will become more plentiful in January and February, as long as the state stays away from lengthy periods of below-freezing temperatures.

“Freezing temperatures are okay, when just short-lived and we warm back up, but it’s when we see those extended periods of really cold weather is when we do see a lot more harm to our crawfish,” Fontenot said.
